1/2 cup rolled oats
1 tbsp flax meal
1 tsp cinnamon
1/2 mashed ripe banana
1 tbsp peanut butter**
1 1/4 cup unsweetened almond milk
1 tbsp chocolate chips
1 tsp maple syrup or honey (optional)
Pinch of salt (optional)
Add all ingredients EXCEPT chocolate chips to a sauce pan.
Allow to come to a simmer over medium heat and cook until thickened, about 5 minutes.
Remove from heat. Then fold in chocolate chips, allowing them to melt into the warm oatmeal to create chocolate swirls.
** Save time in the morning by tossing all ingredients, except banana and chocolate chips into a sauce pan the night before. Store in fridge overnight. Pull out, then heat on stove top along with mashed banana and follow remaining cooking instructions.
** Save on calories by swapping peanut butter for powdered peanut butter.
